One Pot Lasagna Soup
This One Pot Lasagna Soup tastes just like the classic dish, but without all of the prep work. Easy to make and full of simple ingredients!
Ingredients
- 1 pound ground beef
- ½ medium white onion , diced
- 2 teaspoons minced garlic
- 4 cups low-sodium beef broth
- 1 14.5 ounce can diced tomatoes, , drained
- ½ teaspoon Italian seasoning
- ¼ teaspoon dried basil
- Salt and pepper , to taste
- 2 cups dry rotelle or rotini noodles
- ¼ cup shredded Parmesan cheese (plus more for garnish, if desired)
Instructions
- In a medium pot, cook and crumble ground beef, onion, and minced garlic until no longer pink. Drain, if needed.
- Add beef broth, diced tomatoes, Italian seasoning, basil, salt and pepper to pot. Stir and bring to a boil.
- Once broth is boiling, add pasta and stir to combine. Reduce heat to medium and cook for 10 minutes or until pasta is tender.
- Remove from heat and stir in cheese. Serve immediately with additional cheese, if desired.
